1.5kg Pumpkin, peeled and cubed
1 carrot, peeled and chopped
1 sweet potato, peeled and chopped
1 celery stick, chopped
1 onion, chopped
1 tablespoon coconut oil
2 teaspoon turmeric
½ teaspoon nutmeg
Salt and Pepper
1. Start by preheating a large saucepan on a medium temperature and melt the coconut oil. Then, add the onion, turmeric, nutmeg and cook until it becomes soft.
2. Add all the vegetables and add around 2cm of water until the vegetables are covered.
3. Let the pan boil and then turn down the temperature, cover with a lid and simmer for around an hour until the vegetables are soft.
4. Once cooked, put the vegetables into a food mixer and whiz until smooth. Season with a pinch of salt and freshly ground black pepper before serving.
