Piri Piri Chicken
1 Red onion, cut into 8 wedges
1 Tablespoon Olive Oil
4 Skinless Chicken
1 Red and Yellow Pepper de-seeded and cut thinly.
Large amount of fresh coriander or parsley, roughly chopped.
For the Piri Piri Sauce
1 red Onion, roughly chopped
2 Garlic Cloves, roughly chopped
1 Red Chilli, deseeded and chopped
½ Teaspoon Smoked Paprika
Juice of Lemon
1 Tablespoon White Wine Vinegar
1 Tablespoon Worcestershire Sauce
1. Start by preheating the oven to 200oC and put the onion wedges into an ovenproof dish, then drizzle some oil over them and roast in the oven for around 15 minutes.
2. To make the sauce, start by adding all of the ingredients to a blender and whizzing until they are smooth. Set this aside and slash the top of each piece of chicken to allow the flavour to stick to the chicken. Remove the onions from the oven and add the chicken, sauce and peppers, toss this together and mix, rearrange in a pan and cook for around 25 to 30 minutes or until the chicken is cooked through.
3. Garnish with coriander or parsley and serve with bread or a salad.
