1 Medium Free Range egg
75g 0% fat Greek Yogurt
1 Tablespoon Corn flour
30g Gluten Free Plain Flour
Pinch of salt and freshly ground black pepper
100g Sweet corn, drained
1 Spring Onion, sliced thinly
2 Slices of bacon
½ Sliced Avocado
1 Tablespoon maple syrup
1. Start by mixing together the egg, yogurt, corn flour, salt, pepper and gluten free plain flour in a bowl until it forms a smooth batter. Then, add the sweet corn, spring onion and mix. Heat up a non stick frying pan and add some coconut oil.
2. Put half of the mixture into the frying pan and cook for around 1-3 minutes until crisp and golden. Flip the fritter over using a spatula and cook for around 1-2 minutes. Continue with the rest of the fritter mixture.
3. Meanwhile, heat a griddle pan and fry the bacon for 1-2 minutes on each side. Serve by placing one fillet with two slices of bacon, some slices of avocado, tomato and a drizzle of maple syrup.
